In this paper,the evaporation and concentration of the grape juice was carried on a heat pipe evaporator,to investigate the evaporation heat transfer process of the juice.Through parametric studies,it was found that the feed rate,evaporating temperature,temperature difference of the heat transfer and operating concentration,had improtant effect on the evaporating heat transfer coefficient.An empirical relating formula was obtained based on experimental data and was useful for the design of new evaporators and optimization of the fruit juice concentrating process.
