In the paper,the aqueous dispersible Lutein is developed by microemulsion technology.The effects of six factors,including surfactant,co-surfactant,edible oil,the ratio of surfactant and co-surfactant,temperature and NaCl concentration on Lutein formation are investigated.The opti-mum preparation conditions are as follows:take Tween80 as surfactant and ethanol as co-surfactant, the ratio of ethanol and Tween80 is 1∶1,the ratio of corn oil and Lutein is 10∶1.Deionised water is added to the system with low-speed stirring at 50 ℃ drop wise,and then mixing system would become clarification by the gel phase.On this condition,the content of Lutein could achieve 0.22%.Mean-while,the Lutein microemulsion is slightly affected by NaCl concentration of 0.5%~2%.%采用微乳技术来提高叶黄素水分散性,考察了表面活性剂、助表面活性剂、食用油、表面活性剂/助表面活性剂比值、温度和NaCl浓度对叶黄素微乳形成的影响。结果表明:以Tween 80为表面活性剂,无水乙醇为助表面活性剂时,无水乙醇∶Tween80以1∶1混合,加入玉米油和叶黄素,其中玉米油与叶黄素的质量比为10∶1,在50℃低速搅拌过程中逐滴添加去离子水。当混合体系由凝胶相变得澄清透明,此时即形成叶黄素微乳,叶黄素含量达到0.22%。0.5%~2%的NaCl对叶黄素微乳形成影响较小。
