居民食物消费特征及影响因素分析——基于全国20省居民食物消费调研

         

摘要

The food consumption structure is in the stage of adjustment and upgrading,so the study on characteristics and influencing factors of food consumption is helpful to predict the demand and guide the production structural adjustment.Based on the data of food consumption in 20 provinces of China,this article applied the linear system model to analyze the influences of income,price,area and preference.The results showed that the income level had significant effect on aquatic products and dairy food of urban residents with the influence coefficient 0.20,and the influences of areas,regional differences,diet structure and preferences for consumption were also obvious.In the future,it is necessary to develop the scale of agricultural modernization and improve the agricultural production efficiency to increase farmers' income,adjust the production structure according to the food consumption demand,focusing on the development of animal husbandry and aquaculture,and promote and guide the healthy dietary pattern.%我国居民食物消费结构正处于调整升级阶段,研究食物消费特征和影响因素有助于预测需求和指导生产结构调整.根据全国20省居民家庭食物消费调研的数据,运用线性系统模型分析收入、价格、地区和偏好等因素对消费量的影响,结果显示:收入水平对城镇居民水产和奶类等食物影响最为显著,影响系数均为0.20;产区、地区差异、饮食结构和偏好等因素对消费量的影响较为明显.未来应该大力发展农业规模化、现代化,提高农业生产效率,增加农民收入;根据食物消费需求调整生产结构,重点发展畜禽业和水产养殖业;并且推广和引导健康的膳食模式.
