Corn peel is one of the main byproducts of maize processing and production. It is mainly used in the feed industry, resulting in a waste of resources and a relatively low added value. Because there is a lot of corn di-etary fiber, it is a good raw material for the preparation of dietary fiber. The physiological functions of corn di-etary fiber were summarized, and the methods of extraction and modification of corn dietary fiber and the appli-cation of corn dietary fiber in food were summarized. The development prospect of corn dietary fiber was also discussed.
