采用化学修饰法将高粱蛋白质(SP)制备成硒化高粱蛋白质(Se-SP)并鉴定其抗氧化活性。结果表明,各种Se-SP均表现出一定的谷胱甘肽过氧化物酶(GPX)活力,其中Se-SP23的活力最高,为227 U/g蛋白。各种Se-SP均还可发挥清除1,1-二苯基-2-三硝基苯肼自由基(DPPH·)、羟自由基(·OH)和超氧阴离子(O2-·)等自由基的作用,并可有效降低抗坏血酸/二价铁离子(VC/Fe2+)诱导损伤线粒体中脂质过氧化产物丙二醛(MDA)的产生,维持心肌线粒体的形态,抑制损伤线粒体的膨胀。%Selenide sorghum proteins (Se-SPs) were prepared by chemically modified method, and their an-tioxidant activities were identified. The results showed that Se-SPs possessed certain antioxidant activity of glu-tathione peroxidase (GPX), Wherein, GPX activity of Se-SP23 was highest, about 227 U/g protein. Se-SPs could play a scavenging role in free radical such as 1,1-diphenyl-2-three nitrophenylhydrazine(DPPH·), hy-droxyl radical(·OH) and superoxide anion(O2-·). Moreover, Se-SPs could effectively decrease content of the lipid oxidation product MDA from damaged mitochondria induced by ascorbic acid/divalent iron ions(VC/Fe2+), and could be maintained in the cardiac mitochondrial morphology to avoid swelling.
