Preparing the mixed beverage with Rhizoma gastrodia and honey as main material.Thepreparation of brewed liquid of Rhizoma gastrodia and the ration of stabilizer were studied. The result were showed , the ratio of material to solvent of brewed liquid of Rhizomagastrodia was 1:30 (g/mL),cooking time was 30 min,the ration of stabilizer was CMC:XG=5:1 (g:g). The Rhizoma gastrodia and honey mixed beverage formula process was 0.15%composite thickener 9%sugar, 0.5%honey, 0.17%citric acid,the time of homogeneous was 5 s. The mixed beverage tastes delicious, the content of gastrodin was 0.222 3 g/L.%天麻和蜂蜜为主要原料,制备复合饮料.研究了天麻煮制液制备、稳定剂配比,通过正交实验优化了天麻蜂蜜茶配方.研究结果表明:天麻煮制液的料液比为1:30(g/mL),煮制30 min后品质最佳,稳定剂的配方为:羧甲基纤维素钠:黄原胶=5:1(g/g).天麻蜂蜜复合饮料的配方工艺为:0.15%的复合稠化剂,9%的蔗糖、0.5%的蜂蜜和0.17%的柠檬酸,均质时间为5 s.复合饮料酸甜可口,其中天麻素的含量为0.222 3 g/L.
