In this paper, sodium alginate, calcium lactate and sodium alginate - calcium lactate composite penetrant treatment on strawberries before quick-frozen processing were studied. The hardness, weight loss, anthocyanin and vitamin C content of quick-frozen strawberries were measured after thawing and compared to that in the control group. The results show that the above three penetrants all have the effects of improving hardness, reducing weight-loss, delaying anthocyanins discoloration and keeping the stability of vitamin C of quick-frozen strawberries, and the sodium alginate-calcium lactate composite penetrant was the best of all. Through orthogonal test,the optimal osmosis process parameters of composite penetrant were identified, that the composite penetrant formula was that 1.5 % calcium lactate and 0.6 % sodium alginate , and the infiltrating temperature 30℃and treated time 1.5 h.%研究了海藻酸钠、乳酸钙以及海藻酸钠-乳酸钙复合渗透剂在草莓速冻前渗透处理,经速冻、解冻后,测定硬度、失重率、花色苷和VC的含量,并与未经渗透处理对照组比较。结果表明上述三种渗透剂均有提高硬度、减少汁液流失、延缓花色苷和VC含量降低作用,其中复合渗透剂效果更突出。通过正交试验确定了海藻酸钠-乳酸钙复合渗透工艺最佳优化是:复合渗透剂配比为1.5%乳酸钙、0.6%海藻酸钠,渗透温度为30℃,渗透时间1.5 h。
