With the extensive application of refrigeration equipments , psychrophile and its metabolites , which are themoduric, will be a major factor to affect the quality of raw milk and dairy products. The study points to fresh raw milk as the object and sets up the corresponding Microbial primary growth model by researching total bacteria and psychrophilic of the raw milk at different temperature in spring.Setting up by Gompertz , the growth kinetic model of total colony and psychrophilic in raw milk , which has been stored at between 4℃and 14℃,it can effectively simulate and predict microorganism growth.The study shows that there is a dependability between total colony and psychrophilic in raw milk at low temperature.%随着冷藏设备的广泛应用,嗜冷菌及其耐热代谢产物成为影响原料乳质量和乳制品质量的主要因素.以奶站的新鲜原料乳为研究对象,研究春季原料乳中总菌落和嗜冷菌在不同储存温度下的生长情况.使用Gompertz模型建立4℃~14℃储存的原料乳中总菌落和嗜冷菌的生长动力模型,模型可以有效的模拟原料乳中微生物的生长情况.低温储存的原料乳中总菌数与嗜冷菌有一定的相关性.
