α-半乳糖苷酶及其在肉鸡日粮中的应用

         

摘要

[目的]综述α-半乳糖苷酶及其在肉鸡日粮中的应用.[方法]对α-半乳糖苷的结构、特性、抗营养作用机理及α-半乳糖苷酶的特性及在肉鸡日粮中的应用进行综述,并展望了其应用前景.[结果]α-半乳糖苷是无色透明状液体,甜度为蔗糖的70%,总能为8 136kJ/g,粘度低于麦芽糖,吸湿性比蔗糖小.α-半乳糖苷由半乳糖、葡萄糖和果糖组成,具有良好的热稳定性.在肉鸡日粮中添加α-半乳糖苷酶后,肉鸡日增重增加,能量代谢及养分利用率提高.[结论]该研究为进一步推进该酶制剂在肉鸡日粮中的合理应用奠定基础.%[Objective]The research aimed to summarize a- gulactosidase and its application in broiler diet. [Method]The structure, characters and anti-nutrition mechanism of a- galat-toside, the characters of a-galactosidase and its application in broiler diet were summarized. And the ap-plication foreground was forecast. [Result] a- galactoside is colorless and clear liquid, its sweetness wan 70% of sucrose, its gross energy was 8 136 kJ/g, its mucosily is lower than maltose and its moisture absorption was lower than sacr-harose. a- galactoside is composed of galaetose, glucose and fructose and it has a good thermal stability. After adding a- galactosidase in the broiler diet,the daily weight gain increased,the energy metabolism and nutrient utilization rate enhanced. [ Conclusion ] The research laid the foundation for advancing the reasonable application of the enzyme preparation in the broiler diet further.
