色质联用技术在保健食品违禁化学物质分析中的应用

         

摘要

色谱-质谱联用技术是将色谱的高分离能力和质谱的鉴别能力相结合,组成一种现代分析技术,它充分体现了色谱和质谱的优势互补.本研究介绍了保健食品的定义、分类;归纳了常见保健食品中可能添加的违禁化学物质种类;介绍了保健食品中违禁化学物质分析技术现状;并按照保健食品功效分类,对近年来色质联用(主要是液相色谱-质谱和气相色谱-质谱)技术在保健食品违禁化学物质分析中的应用进行综述.%Chromatography-mass spectrometry is a modern analytical technique, which combines the ability of high resolution of chromatography and identification of mass spectrometry, and fully reflects the superiority of chromatography and mass spectrometry. This paper presented the definition and classification of health foods, summarized the types of illegal chemicals that may be spiked in common health foods, introduced the status of illegal chemical analysis in health foods, and according to the classification of effectiveness of health foods, summarized the application of chromatography-mass spectrometry combined technology, liquid chromatography-mass spectrometry and gas chromatography-mass spectrometry mainly, on illegal chemical analysis in health foods in recent years.
