钾肥施用对茶鲜叶香气组分的影响

         

摘要

The aroma components in different potassium treatments were extracted by headspace solid-phase micro-extraction (HS-SPME) and analyzed by gas chromatography-mass spectrometry (GC-MS). Results showed that after applying potassium fertilizer, the isoamylene bisphosphate class and phenylalanine class increased. With increasing of the potassium fertilizer level, rate of increase of linalool reached 50.34% (A,) , 61.72% (A2) and 81.03% (A3) respectively, and the differentiation between different treatments reached a significant level (P <0.01). Compared with CK1, in A2 and A3, the amount of benzyl alcohol increased by 24.61% , 48.60% , respectively, and β-phenylethyl alcohol increased by 30.67% , 43.25% respectively. For fatty acids class, a-roma with the smell of grass gas (heptanal) reduced and aroma with the smell of flower (nonanal and octanol) increased. In addition , the common effect of different kinds of potash on tea aroma was the increase of isoamylene bisphosphate class and phenylalanine class. It is found that the content of isoamylene bisphosphate class (for example linalool, ocimene) in potassium sulfate treatment is much higher than that in sulphate-potassium magnesium sample and the content of phenylalanine class (for example benzal-dehyde, p-phenylethyl alcohol) in sulphate-potassium magnesium is much higher than that in potassium sulfate treatment sample.%采用顶空固相微萃取—气质联用法研究了钾肥施用对茶鲜叶香气的影响.结果表明:与不施钾肥处理(CK1)相比,随着钾肥施用量的增大,茶鲜叶异戊烯二磷酸类中的芳樟醇含量明显增加,施用100(A1处理)、200(A2处理)、400(A3处理)kg·hm-2氯化钾(K2O≥60%)分别增加50.34%、61.72%和81.03%,且相互间的差异达到极显著水平(P<0.01);与CK1相比,A2、A3处理的苯甲醇含量分别增加24.61%、48.60%,β-苯乙醇含量分别增加30.67%、43.25%;钾肥施用后,脂肪酸类中具有青草气味的庚醛含量降低,而具有花香气味的壬醛、辛醇含量增加;施用不同种类钾肥对香气物质的影响共同表现为,增施钾肥能增加异戊烯二磷酸类和苯丙氨酸类挥发性物质的总量,施用硫酸钾能显著增加异戊烯二磷酸类挥发性物质中芳樟醇、罗勒烯等的含量,而施用硫酸钾镁能显著增加苯丙氨酸类挥发性物质中苯甲醛、β-苯乙醇等的含量.
