消费者食品安全问题识别能力与安全食品购买行为

         

摘要

Consumers identification on food safety problems is the key to avoid“bad money driving out good mon⁃ey”. Based on field survey data of 660 consumers in Jiangsu province, we use Ordered-Logit model to study the Con⁃sumers’ skills of identification on food safety problem and influencing factors, and further analyze the relationship be⁃tween consumers’ skills of identification on food safety problem and purchasing behavior. The study shows that the lack of consumers’ skills of identification on food safety problem causes that people do not buy food with food safety certification; food safety knowledge learning and information searching are the main factors influencing the consumer food safety recognition ability; the improvement of trust in government public management can effectively increase con⁃sumer’s recognition of food safety problems; age and gender have great effects on such ability. Therefore, popularization of food safety knowledge and improvement of government’s credibility is the key to increase consumers’skills of identi⁃fication on food safety problem.%大量具有食品安全问题识别能力的消费者是避免食品安全市场“劣币驱逐良币”的关键。研究基于江苏省消费者660份实地问卷调查数据,利用Ordered Logit模型研究了消费者食品安全问题识别能力及影响因素,并进一步分析了消费者食品安全问题识别能力与安全食品购买行为的关系。研究发现,消费者食品安全问题识别能力薄弱是导致安全食品购买较少的主要原因;食品安全知识学习和信息搜寻是影响消费者食品安全问题识别能力的主要因素;基层食品安全执法部门信任的提高能够有效增加消费者食品安全问题识别能力;年龄和性别对消费者食品安全问题识别能力有显著影响。因此,加强食品安全知识普及教育和提高基层食品安全执法部门公信力,是提高消费者食品安全问题识别能力和实现食品安全市场分离均衡的关键。
