Occurance, constitution and application of turmeric colorants are briefly discussed. Turmeric is a yellow-coloured fluorescent extract obtained from the rhizomes of several species of the curcuma plant. It is an important source in nature of yellow pigment, spice, nutraceuticals, and herbal medicines. The colorants obtained from turmeric are known as turmeric or curcumin while the pigments from turmeric rhizomes are called curcuminoids belonging to the diaroylmethane group of colorants. Curcuma longa L. is the plant from which commercial turmeric is extracted. This plant belongs to Zingiberaceac (ginger) family. These plants grow wild in humid tropical climates. India contributes the highest in the world production of turmeric.
