It is an eclectic issue this month, filled with Australian cheeses and what the Chinese are buying internationally in the way of dairy. There is also a large collection of equipment and new products, as a few trade shows are running over the next few months. It goes to show the truly international flavour of dairy, where one person's kefir is another person's cheddar cheese and quark. The move by China to expand its milk production through international co-operation and purchases is quite an interesting trend, and one that should supply this growing market with quality milk for years to come.
