France is a country where rural history and love of the land - terroir - deeply affect commercial agriculture. Therefore the renaissance of French goats milk cheeses and other goat products has highlighted every aspect of husbandry and production. Although only six per cent of the retail cheese sales, this category has grown by 4.5 per cent over the past year. Principal producers on an industrial scale in Europe are headed by Greece (30 per cent) then France (28 per cent) followed by Spain (25 per cent). However, France does claim to be 'the biggest transformer of goats' milk into cheese in the world'.
