Sanitation in a food processing facility is built from the ground up. But that doesn't mean a plant has to be brand new to have the best sanitary design - an upgrade can usually address problem areas and improve sanitation.rnThe goal of Good Manufacturing Practices is to reduce or eliminate microbial cross-contamination, and the design of a plant can help, said Rudi Groppe, a manufacturing engineer with Heinzen Manufacturing International. The plant design includes everything from wall systems,rnflooring and drains, refrigeration and waste, but it also should account for the produce flow and the people flow.
