From the individual customer through to the largest food manufacturer, the biggest challenge facing the agriculture sector is in giving customers the guarantees they need when buying food. You don't have to look very far to understand the cause of these concerns, but neither do you have to search very hard for the solutions. Just before Christmas, a single cow in Washington state was found to have BSE. The cow had come from Canada. The authorities knew because they checked back across the border to its farm of origin. It wasn't a matter of luckThey had the systems in place to halt the spread of the disease. Of course, they didn't spot the infection until it reached Washington - but then symptoms don't always manifest themselves on demand. No wonder standards (and testing to ensure specifications are met) are becoming so crucial. Food safety is just one of the reasons why more and more people want to ensure the quality of the food they eat In recent years, the UK has had to cope with a spate of major scares involving foot-and-mouth disease, BSE and dioxins in salmon, among others. Some of these scares have had a knock-on effect to sectors other than food and agriculture, such as in-bound tourism.
