Given the option of big or small, what would you choose? Well, of course, you'd say it depends, wouldn't you? You'd want a big heart and a small stomach. And who cares anyway, because as we all know, size doesn't matter. Well, increasingly, it does in the dairy industry and, increasingly, defining and understanding the terms big and small is becoming a pressing need for the sector. For me, almost always, big means good. It means efficient, competitive and progressive. For many others, including for the most part consumers, small means good. It means safe, traditional and worthy. So, consumers, in most cases, want to protect small businesses, believing that by doing so, they are sustaining them economically. In fact, in my view, they are doing the very opposite.
