The quality of raw material determines not only the economy of sugar technology, but environmental situation of the factories as well. These questions have increasing importance with the present Hungarian legislative alignment to European Union. All parameters of sugar beet quality are reviewed from the point of view ot their impact on the environmental situation of the sugar factories. It is presented how the emissions to water, air and soil, the quanlity of by-products and waste are effected by these factors. It is stated that sugar factories can carry out effective, economical protection of environment with proper beet quality only.
