摘要

Five varieties ot summer squash (Cucurbita pepo) were screened for different biochemical constituents under the conditions of Pithoragarh. Varieties tested were Ambassador, Australian Green, Fresh Green, Chaubatiya Green and Black Zucchini. It was observed that variety Ambassador was found significantly superior in fat, total sugars and reducing lugars followed by Australian Green, in fat and reducing sugars and Chaubatiya Grean in total sugars. Australian Green contained highest amount oi T S. S andcarotenes followed by fresh Gieen in T. S. S. and black Zucchini in carotenes. In etude fibre, ascorbic acid and non reducing sugars vareity Fresh Green was found to contain highest amount which was followed by Australian Green. Cbaubatiya Green varietywas found to contain highest amount of moisture followed by variety Black Zucchini where as Black Zucchini was found to contain significantly highest amount of protein and total minerals which was followed by Chaubatiya Green. On rating the varieties on I, II and IIIrd rank score level of different constituents, variety Fresh Green with 4 score followed by Australian Green was found best performers.
