Consumers are becoming increasingly aware of the many and various culinary uses as well as the health and nutrition benefits of potatoes. We now have the opportunity to show consumers that potatoes can also be one of the safest vegetables to consume.The reasons that potatoes are a very safe food are twofold. First, potatoes are typically cooked/processed prior to consumption, therefore minimizing the viability of microorganisms on the surface.
