摘要

As the world shrinks and international commerce expands, food-borne illnesses have become a major public health focus worldwide. The food handlers who may harbour the pathogens play a very important role in transmission of food borne diseases. These pathogens may be introduced into foods during production, processing, distribution and preparation. Food handlers who are ill informed, poorly trained and who do not practise good personal hygiene such as coughing and sneezing in food preparation area, wearing dirty clothes and caps, spitting and chewing tobacco, pan, etc. may introduce a variety of micro-organisms in food.
