The benefits of refrigerating ginseng root prior to drying can result in the root colour and textures most desired by buyers, according to Dan Van Hooren, Ontario Ministry of Agriculture, Food and Rural Affairs. Root refrigerated after digging, thenlater dried at a constant temperature, consistently "produced the best dried quality," Mr. Van Hooren said. These were the results of his and HR Lester's two-year study on the effects of conditioning and drying ginseng roots. Mr. Van Hooren summarized these findings for ginseng growers last fall at the Simcoe Horticultural Research Station.
