In order to qualify as organic, wine must be produced by certified vineyards. These operate an ecologically-sustainable system of agriculture, based on natural soil fertility and biological pest control. Organic vineyards maintain fertility by using liberal doses of organic compost. They avoid nitrate and phosphate fertilisers which discourage deep root growth and can make vines more susceptible to pests and disease. Soil management is crucial, since erosion or poor fertility in a vineyard cannot becountered by crop rotation.
