摘要

This paper describes the development and evaluation of suitable methodologies for drying persimmon fruit to test the feasibility of small-scale on-farm production and larger scale commercial production of dried persimmon through research and on-farm drying trials. Principally three drying methods were evaluated: raised trays, a solar box and a permanent 'large-scale' brick solar dryer. The results are discussed in terms of the production of a high-quality product. The economic feasibility is considered, based on market data collected for dried fruit and a simple economic analysis of the production systems employed.
