The visual grading system of Colocasia esculenta (cv. Lehua, grown in Hawaii, USA) corms was correlated with corm weight, water content, pH, glucose content, sucrose content, total aerobic plate count (APC) and mould/yeast count. Sucrose content andAPC were significantly different between the rejects (grade C) and the 2 commercial grades A and B. Only the glucose content was significantly different among all 3 grades. The graded corms were stored at 6deg C for 4 weeks. Grade A corms were all acceptable after storage, while 40% of grade B corms were acceptable. Again glucose content was the only measurement which indicated this difference.
