Sword bean (Canavalia gladiata) is an under exploited minor leguminous vegetable and work on this crop is very scanty. The sword bean is presumed to be of South Asian or Africa in origin. Canavalia is a small genus consisting of 48 species of which four species are reported from India, viz., C. ensiformis, C. gladiata, C. maritima and C. virosa. Of these, C. ensiformis (jack bean) and C. gladiata (sword bean) occur in North-East region of India and are being cultivated for the edible pods. Its greentender and non-fibrous pods are used for vegetable purposes. The immature pods and seeds contain about 75.2% water, 6.9% protein, 0.5% fat, 13.3% carbohydrate, 3.3% fibre and 0.8% ash (1). It is also grown for mature seeds, forage or for green manure. InPhilippines, the matured seeds are primarily used for ginisa (salted) dishes while immature pods and immature leaves are used as vegetable in dishes like salad, pinakbet, lumpia, ginataan and as vegetable component of meat dishes such as sinigang and nilaga (2). In Japan, young pods of sword bean are sliced and pickled in soy sauce.
