Hungarian cultivars bred by Pal Maliga, play an important role in sour cherry production, as they are present in several sour cherry growing countries all over the world. Our cultivars are suitable not only for industrial processing, but also for fresh consumption because of their pleasant flavour. Changes in the phytochemicals content of four sour cherry cultivars ('Erdi jubileum', 'Erdi botermo, 'Maliga emleke', 'Kantorjanosi 3') were studied in 2008 and 2009. Considering the ripening stage, cherries were examined at three harvest times. Our aim was to optimize the time of harvest according to the antioxidant capacity, nutritional components and also the demands of the industry. Ferric reducing/antioxidant power (FRAP), anthocyanin, polyphenol and water soluble dry matter content of fruits were investigated under laboratory conditions. According to the results of phytochemical composition, it can be stated that the year does not affect the antioxidant capacity. On the other hand quantitative differences were observed. For instance, we established that the optimal harvest time for industrial processing is between the second and third picking. By this time the ferric reducing/antioxidant power, anthocyanin, polyphenol and water-soluble dry matter content of cultivars were the highest.
