At least five species of Metroxylon were found in West Seram, Maluku, and four of these were utilized widely. The species were locally called tuni, ihur, molat and makanaro. Characteristic distinctions of the starch were habitually known by the Malukupeople.Some properties of the starches were observed. The investigation indicated that the initial gelatinization temperature of starches of molat (Metroxylon sagus) was at 64°C, tuni and ihur (M. rumphii and H. sylvestre) at 65°C for the makanaro (M. longispinum) . Under the same liquefying conditions, the enzyme hydrolyze starch of M. longispinum was 20% lower than of 3 other sago starches. The starch from M. sagus was more susceptible to glucoamylase reaction compared to the other sago starches. Degree of hydrolysis was 38% for M. sagus, 36% for M. rumphii and M. longispinum and only 33% for the M. syvestre after 48% hr incubation.
