Effect of Addition of Defatted Cottonseed Cake Powder on Preparation of Quality Extruded Products

A study was carried out to investigate the effect of addition of defatted cottonseed cake powder (DCP) on preparation of extruded using single screw extruder products and its quality. Extruded products were prepared from DCP and defatted and fermentedcottonseed cake powder (DFCP). DCP and DFCP were blended with mixture of rice and maize flour in the ratio of 10 and 20%. Moisture content and particle size of raw material were kept constant at 14% and 0.708 mm respectively. Machine parameters such asscrew speed was set at 100 rpm while the temperature of various zones of extruder viz. feed section zone, compression zone, metering zone, and die head temperature were kept as 40,60,140 and 170°C respectively. A die of 3 mm size was used to produce extruded products. The physical and chemical properties of the extruded product were analyzed. The results showed that the free gossypol was absent in all extruded products while the bound gossypol was found minimum (0.4 %) in extruded product incorporatedwith DCP at the rate of 10 %. The protein content of the extruded product was found maximum in extruded product incorporated with DCP at the rate of 20 % while reducing sugar was found maximum in extruded product incorporated with FDCP 20%. The sensory evaluation of extruded products among a group of 10 people showed that 7 rated very much, 2 rated like moderately and 1 rated like slightly.
