Consumers increasingly seek flavoursome cuts of meat with a drive towards lower fat/healthier food options.IMF concentration influences both the health profile of meat and important characteristics of sensory quality such asjuiciness, flavour and tenderness perception (Pannier et al., 2014). Studies in pigs have identified differences betweenbreeds in relation to IMF concentration and variation in IMF is also associated with changes in the fatty acid profile(Vehovsky et al., 2015). High levels of saturated fatty acid (SFA) consumption are associated with increased risk ofcardiovascular disease, while certain MUFA and polyunsaturated fatty acids (PUFAs) are associated with human healthbenefits. The objective of this study is to identify differences between breeds for IMF and FA profile to understand how themeat of different breeds can meet consumer needs.
