Trading, particularly of fresh fruits and vegetables, needs better mutual agreement between trading partners, including primary industry producers. Durian flesh has good taste and texture if its nature is known and the fruit is appropriately managed.Otherwise, a negative experience may occur, with a strong and objectionable taste and odour of overripe fruit. The flesh texture, odour, and taste of mature green and overripe durian fruit may be comparable to young and old cheeses. Durian fruit connoisseurs in particular have individual preferences for flesh at particular stages of ripeness. Consumers and traders, as well as researchers, should know the attribute of the produce. A Codex standard for durians was internationally adopted in 2014 through the process of the Codex Alimentarius Commission, an intergovernmental body with over 170 member nations within the framework of the Joint FAO/WHO Food Standards Programme, with the purpose of protecting consumer health and ensuring fair trade practices for produce. The format of Codex Standards for Produce includes eight outlines: definition of produce, provisions concerning quality, provisions concerning sizing, provisions concerning tolerances, provisions concerning presentation, marking and labelling, contaminants, and hygiene. Each of these for durians will be detailed and discussed.
