Polymerase chain reaction (PCR) can be used in the identicationof bac ter ial pathogens in dai r y produc t s , as wel l as in thegenotyping of bacterial microbiota. Conventional PCR has beenused in dairy microbiology to amplify specic genetic targets toidentify pathogens including Listeria monocytogenes, Salmonellaenterica, Staphylococcus aureus, Escherichia coli O157:H7,and has been found to be a more sensitive and rapid techniquecompared to culture-based methods. Furthermore, PCR-basedngerprinting methods have been increasingly investigated as amore rapid tool than the current gold standard, pulse-eld gelelectrophoresis (PFGE), for genotyping foodborne pathogens andmicrobiota. In this paper, two case studies are also describedthat illustrate how one such technique, enterobacterial repetitiveintergenic consensus (ERIC)-PCR has been used to determinethe genetic diversity of E. coli isolated from contaminated dairyproducts.
