The recent annual report of the government chief Medical Officer reported that there were 850 cases of E. coli O157 in England in the year 2000 and that the number of out-breaks doubled between 1992 and 2000. Because of the possible severity of the infections, licensing has already been introduced for butchers' shops that handle raw and cooked meats. Because of similar risks of food being contaminated in cafes, restaurants and take-aways, pressure is building for licensing of these establishments also, which would necessitate action in some 400,000 UK establishments.
