Americans are eating too much salt and fats, not enough nutrient-dense foods, and they are deficient in a handful of important vitamins. But since the 2005 Dietary Guidelines already address these issues, what else can be done to make people change their behavior? That was the significant challenge put before the USDA's Dietary Guidelines 2010 Advisory Committee when it gathered Oct. 30-31, in Washington, D.C., for the first of five meetings expected over the next 12 months. The committee will meet again in late January or early February, though a date has not yet been determined.
