Meat and poultry processing plants should design and adopt food defense plans, but their use will remain voluntary unless adoption rates do not meet USDA expectations, USDA's Food Safety and Inspection Service says in a soon-to-be arriving letter from the agency.FSIS released Notice 67-09, General Food Defense Plan, on Sept. 25 to notify establishments that did not have defense plans in place last October that they would once again be asked to consider adopting one. Subsequent to the notice, plant managers are advised, a letter will arrive providing suggestions.
