摘要

Four aspects of water use (intake, treatment prior to use, recirculation and discharge) are examined for the Canadian food processing industry and three of its subsectors (meat, dairy, fruit and vegetables). Price and output elasticities are estimated using plant-level data from a 1991 national cross-sectional survey of water-using firms, and water policy implications are drawn. Results indicate that all aspects of water use are sensitive to economic factors such as the external price of intake water, the internal costs of water use and the level of output. Water intake and recirculation are substitutes for the food processing sector as a whole, as well as for all industry subgroups. The results support the view that economic policy instruments can be effective in managing the water demands of the sector.
