Application of the herbicides mesotrione and atrazine increased levels of carotenoids in sweet corn, a study scheduled for publication in the journal of Agricultural and Food Chemistry on July 22 says. Carotenoids are organic pigments in plants that absorb light for photosynthesis but serve as antioxidants and vitamin precursors in people. Eating vegetables rich in carotenoids may reduce the risk of heart disease, cancer and macular degeneration, which is a leading cause of vision loss in the elderly.
