the present invention relates to the preservation of meat products by means of an edible composition, a coating or film manufactured based on two main components which are gelatin of terrestrial and / or marine origin and a natural extract of plants with antioxidant and antimicrobial properties, as is the extract of peumus boldus. the composition, the coating or the film are applied on the meat products, allowing to preserve the organoleptic properties, as well as preventing microbial development and oxidation of the food meat product.
