The present invention provides a method for manufacturing a Japanese apricot extract and Japanese apricot wine using Rocheon Japanese apricot and Chihyang Japanese apricot. The method for manufacturing a Japanese apricot extract comprises: a step of harvesting unripe Rocheon Japanese apricot; a step of forcibly ripening the Rocheon Japanese apricot by making the Rocheon Japanese apricot in contact with ethylene gas; a step of mixing 10-40 parts by weight of Chihyang Japanese apricot with respect to 100 parts by weight of the Rocheon Japanese apricot to obtain mixed Japanese apricot; a step of mixing 40-80 parts by weight of sugar and 0.1-1 part by weight of licorice with respect to 100 parts by weight of the mixed Japanese apricot; and a step of storing the mixed ingredients at room temperature for 1-12 months. Therefore, the manufacturing method can manufacture a Japanese apricot extract and Japanese apricot wine with excellent flavor and high consumer preference.;COPYRIGHT KIPO 2019
