A process for the non-destructive determination of the gender and / or stage of development of an avian embryo in an egg, comprising (a) detecting at least one first developmental marker for the determination of the selected stage of development of Betaine, Aspartate, Arginine, glutamate, glutamine and proline and / or at least one first developmental marker for the determination of the genus selected from Glucose, Choline and / or Valine in the allantoic liquid of an egg in a period of time from the start of the incubation of the egg until hatching; (b) measuring the amount of the at least first developmental marker compound detected for determination of developmental stage and / or gender; and (c) compare the quantity with a baseline established for males and females, and / or the stage of development of the embryo, to determine whether the embryo is male or female and / or the stage of development of the embryo.
