To provide a dough piece rolling-up device that makes a rolled-up dough piece into a symmetrical fusiform shape.SOLUTION: There is provided a rolling-up device 503 that rolls up a dough piece 3 mounting a solid inner material 6 on an upper surface thereof, comprising a conveying device that conveys the dough piece 3, a rolling plate 509 that rolls up the dough piece, a rotating wheel 431 disposed above the conveying device, a sensor 23 disposed upstream the rotating wheel 431 and detects the dough piece 3 to be conveyed, and an actuator that elevates or lowers the rotating wheel 431 relatively to the conveying device, the rolling device 503 comprising a control device that conveys the dough piece 3 mounting the solid inner material 6 on the upper surface of the dough piece 3 on a bottom side by the conveying device, calculates a conveying position of the dough piece 3 on the basis of a detection signal of the sensor 23, and controls the actuator so as to lift the rotating wheel 431 to bring it into contact with the inner material 6.SELECTED DRAWING: Figure 19
