The present invention relates to a novel Aspergillus candidus (A. candidus) M2079 strain, and a use thereof. The A. candidus M2079 strain, isolated and identified from fermented bean paste, has a high protease activity that effectively produces various amino acids responsible for the savory flavor from beans, which are the main constituent of the fermented bean paste, and reducing sugars offering a sweet taste, and thereby helps a user to produce the fermented bean paste having the rich flavor of traditional fermented bean paste. The A. candidus M2079 strain can solve problems associated with typical enhanced production methods of fermented bean paste, and therefore, can be advantageously used as a seed strain in the production of fermented bean paste.
