PURPOSE: To solve the problem that the dorsal or caudal fin or a tooth or the like of a cooked fish may open a pinhole through a packaging bag and break the vacuum therein by a method wherein a cooked fish is packaged in a thin transparent bag or in a sheet of transparent film, then put into a packaging bag of a specified shape, and subsequently subjected to vacuum- packaging. ;CONSTITUTION: Where a sea bream 10 is cooked, for example, broiled with salt or smoked as prescribed, the sea bream 10 is eviscerated, washed in salt water or the like, seasoned with a seasoning as prescribed, and then broiled or smoked or otherwise. This cooking of the sea bream 10 is followed by its vacuum-packaging. For the vacuum-packaging, the sea bream 10 is first packaged in a thin transparent bag 11 or in a sheet of transparent film 11 and then put into a packaging bag, followed by vacuum-packaging. This packaging securely prevents the pack from having a pinhole. For the thin transparent bag 11 use is made of a rectangular bag of polyethylene etc., with three sides closed and an opening along one side only.;COPYRIGHT: (C)1996,JPO
