PURPOSE:To obtain a food effectively processable into a snack confectionery, cooking material, etc., having improved nutritive value, preservation quality and taste, by drying a sliced pumpkin at a low temperature while ventilating, vacuum packaging the dried and sliced pumpkin in a heat-resistant film and heat-treating the sliced pumpkin. CONSTITUTION:After initially washing with water and removing seeds, a pumpkin is sliced to a given thickness and the resultant slices are dried at a low temperature while ventilating to harden the pulpy substance. The dried slices are then vacuum packaged in a vacuum packaging film having improved heat resistance, heat-treated and sterilized while saccharifying starchy materials contained therein. This production process permits reduction in water exuded from the pulpy substance without causing deterioration and destruction of starchy materials and collapse of the pulpy substance and improves the commodity value. The preservation quality can be simultaneously enhanced and the starchy materials coming out to the surface of the slices can be saccharified in the subsequent heating step to further enhance the sweetness.
