IntroductionIn china,flour mill in the production of bread flour,almost all want to use bread flour improver (do not use bread flour improver number less than 1%),bread flour improver generally by food additives,premixed,and then provided to the flour production enterprises.Due to the use of different quality wheat flour factory,and each plant bread flour also has a lot of grades,the bread flour improver demand there will be differences.Based on the above reasons,studies of bread flour improver of various monomers on bread effect.Purpose is for different bread flour improver,the monomer for the deployment,in order to achieve the best effect of varieties of bread flour.引言国内的面粉厂在生产面包粉时,几乎全部要使用面包粉改良剂(不使用改良剂的面包粉数量不到1%),面包粉改良剂一般是由食品添加剂公司预混合后,再提供给面粉生产企业.由于各面粉工厂使用的小麦品质不同,加上每个工厂面包粉也有很多档次,其对改良剂的要求都会有差异.基于上述原因,研究面包粉改良剂各种单体对面包的作用效果.目的是能够针对不同的面包粉,用改良剂的单体进行调配,以达到该品种面包粉的最佳效果.
