Sucrose is used as raw material to produce sucrose esters. A process of their preparation and isolation is described. They are non-toxic, non-Ionic surfactants. They have a wide range of applications in food, cosmetics, pharmaceuticals and agriculture. India has a good potential for their applications. It is a value-adding product obtained from sucrose.
