The development and application of the Hazard Analysis and Critical Control Point (HACCP), a preventive management system, in the food industry of China was reviewed. The main subjects include the history of HACCP implementation, HACCP communication and training, HACCP auditing, certification, and supervision. The effects of HACCP implementation on Chinese food industry development and problems encountered in the application process were also discussed.
