@@ Introduction Bioavailability and toxicity of selenium (Se) are strongly related to the chemical form (Hartikainen, 2005). Organic Se forms are less toxic, but are significantly important in functional foods, food and feed supplements because of their increased bioavailability. Yeast is applied for the industrial production of selenium-methionine from inorganic Se (Rayman, 2004).
