摘要

The comparative study between red wine, seed and skins extracts showed that these compounds originate from grape seeds and were not detected in skin extracts. This work, based on the exact mass of the molecular ions and the fragmentation pathways, allowed us to partially identify 14 new flavan-3-ol monoglycosides [4]. These new wine compounds might be useful polyphenols markers that may help to monitor seed extraction during winemaking.
